I made these grilled Brussels sprouts several times this week, and they quickly became a household favorite. They’re fast to prepare and make a bold, flavorful side that pairs well with any grilled main. When I’m grilling the entrée, I usually grill the sides too.

A Grill Basket Saves The Day
The original recipe suggests skewering the sprouts, but I find it much easier to use a stainless steel vegetable grilling basket. Skewering raw sprouts can be awkward, and a basket keeps them from spinning, falling through the grates, or causing any accidental pokes.
This method works well for other small vegetables, too — think baby potatoes or asparagus. For firmer vegetables like potatoes, partially cook them (for example, in the microwave) until they’re slightly tender, toss with seasonings, then finish on the grill until nicely charred.
Using a grill basket makes cooking simpler and cleanup quicker. It also prevents pieces from dropping through the grates, so everything grills evenly and looks great when served.
Grilled Brussels sprouts are delicious alongside grilled radishes and roasted or grilled onions. If you prefer a tangy twist, try a Dijon-style version of grilled Brussels sprouts for extra zip.

Ingredients
- 1 pound Brussels sprouts
- 2 tablespoons olive oil
- 1 tablespoon garlic, minced
- 1 teaspoon dry mustard
- 1 teaspoon smoked paprika
- 1 teaspoon Kosher salt
- ¼ teaspoon ground black pepper
- Pinch dried red pepper flakes
Instructions

Heat your grill to medium.

Trim the stems from the Brussels sprouts and remove any loose outer leaves.

Place the sprouts in a large microwave-safe bowl and microwave on high for 3 minutes, stirring once halfway through.

Carefully remove the bowl from the microwave.

Combine the remaining ingredients, pour over the warm sprouts, and toss to coat evenly.

Transfer the sprouts to a grill basket (or skewer them if you prefer) and place on the grill.

Grill for 5 minutes, then stir or shake the basket.

Grill another 5 minutes, or until the sprouts develop a nice char and are tender.
