Ingredients

  • 4 medium apples any variety
  • 2 cups sugar
  • 3 cups water
  • 1/2 lemon juice of
  • 1/2 cup walnuts
  • 1 tablespoon raisins
  • 1/2 cup whipped cream

Instructions

  • Choose a saucepan large enough to hold all four apples in a single layer. Combine sugar and water in the pan, using enough liquid to fully cover the apples; increase quantities maintaining the same ratio if needed.
  • Bring the mixture to a boil, then reduce heat and simmer until the sugar dissolves.
  • Stir in the lemon juice.
  • Peel and core the apples, reserving the peels for later use.
  • Place the prepared apples into the simmering syrup and cook until tender, about 10 minutes depending on the apple variety.
  • Remove the apples from the syrup and allow them to cool.
  • Add the reserved apple peels back to the syrup and simmer until the liquid reduces by about half, concentrating the flavor.
  • Strain out the peels and let the syrup cool to room temperature.
  • Coarsely chop the walnuts and combine them with the raisins to make the filling.
  • Spoon the walnut-raisin mixture into the cored apples. Serve each apple with a drizzle of the cooled syrup and a dollop of whipped cream on top.
  • Enjoy the dessert chilled or at room temperature.
