Crispy Oven-Baked Chicken Nuggets with Yogurt Coating

I’m always searching for nutritious, toddler-friendly lunches. My little one is a picky eater, so I try to offer meals that are both healthy and appealing. These healthy chicken nuggets were a hit — she devoured them, and I enjoyed them too. They also make a great option for a healthier Super Bowl snack: finger-friendly, easy to serve, and satisfying. HEALTHY BAKED CHICKEN NUGGETS

Ingredients:
16 oz (2 large) skinless, boneless chicken breasts, cut into even bite-sized pieces
Salt and pepper to taste
2 tsp olive oil
6 tbsp whole wheat Italian-seasoned breadcrumbs
2 tbsp panko breadcrumbs
2 tbsp grated Parmesan cheese
Olive oil spray

Directions:
1. Preheat the oven to 425°F (220°C). Spray a baking sheet lightly with olive oil spray.
2. Pour the olive oil into a bowl. In a separate bowl, combine the whole wheat breadcrumbs, panko, and Parmesan cheese.
3. Season the chicken pieces with salt and pepper. Add the chicken to the bowl with the olive oil and toss so each piece is evenly coated.
4. Working in small batches, coat the oiled chicken pieces in the breadcrumb mixture, then place them on the prepared baking sheet in a single layer.
5. Lightly spray the tops of the nuggets with olive oil spray. Bake for 8–10 minutes, then flip each nugget and bake another 4–5 minutes, or until the chicken is cooked through and the coating is golden and crisp.

Notes: For best results, cut the chicken into similarly sized pieces so they cook evenly. Serve with your favorite dipping sauce or a side of vegetables for a balanced meal. These nuggets reheat well in a hot oven or air fryer to preserve crispness.
