Ingredients 

  • 2 pounds boneless skinless chicken breasts (or chicken tenders)
  • 2 cups Caesar seasoned croutons (see note)
  • ½ cup panko breadcrumbs
  • ¾ cup grated Parmesan cheese
  • 1 cup all-purpose flour
  • 1 cup prepared Caesar dressing, plus extra for serving (see note)

Instructions 

  • Preheat oven to 400°F. Slice chicken breasts into even tender-sized strips, about 4 per breast, for consistent cooking.
  • Crush the Caesar croutons in a food processor, blender, or a sealed bag until finely broken down.
  • In a shallow bowl combine the crushed croutons, panko, and Parmesan. Place flour in a second shallow bowl and the Caesar dressing in a third.
  • Dredge each chicken strip in flour and shake off excess. Dip briefly in the dressing, then gently remove most of the excess dressing so the coating stays crisp. Press the tender into the crumb mixture to coat evenly.
  • Arrange the breaded tenders on a parchment-lined baking sheet or a lightly greased wire rack set over a sheet pan, spacing them so they don’t touch.
