Air fryer okra is an easy way to get perfectly crispy, flavorful okra without deep frying. This makes a great side dish or a crunchy snack that pairs wonderfully with many main courses.

Instead of a flour coating, this recipe uses cornstarch for a light, extra-crisp texture and keeps the dish gluten-free. To ensure the okra comes out crunchy rather than slimy, don’t overcrowd the air fryer basket—cook in a single layer so the hot air can circulate around each piece.
The cornmeal-like coating gives these bites a restaurant-quality appearance and flavor, even though they’re simple to make at home. Follow the directions below for consistently crisp results.
Ingredients

- Fresh okra
- Olive oil (or another neutral oil such as avocado oil)
- Cornstarch
- Fresh minced garlic
- Garlic powder
- Salt
- Black pepper
Directions:
- Rinse and trim the okra.

- Slice the okra.
Cut the pods into thirds or quarters depending on their length. Try to keep pieces uniform so they cook evenly.
- Coat the okra.
In a large bowl, toss the okra with olive oil, cornstarch, minced garlic, garlic powder, salt, and black pepper until each piece is well coated.

- Air fry the okra.
Arrange the okra in a single layer in the air fryer basket without overlapping. Air fry at 380°F (193°C) for 15–18 minutes, shaking or turning the pieces halfway through to ensure even browning.

- Finish and serve.
The okra is done when it’s golden brown and crispy. Serve immediately for the best texture.

Variations
Add more seasoning – Keep it simple or boost the flavor. Try cayenne for heat or a blend of chili powder, creole or Cajun seasoning, and onion powder for a bolder profile.
Add toppings – These bites don’t need much, but a sprinkle of grated Parmesan and a squeeze of lemon brighten the flavor beautifully.

FAQs
Coating the sliced okra in cornstarch and air frying in a single layer prevents the slimy texture. Make sure the pieces are well coated and spaced apart so they crisp up.
You can use frozen okra straight from the bag, but fresh okra tossed with cornstarch will usually yield a crisper, more flavorful result.
Crispy okra pairs with many proteins and sides: salmon, pork chops, Cajun chicken or shrimp, and air-fried potatoes or other vegetables make great combinations.
