Sometimes I come home from work with an intense craving for chocolate. When chocolate is in the house it usually doesn’t last long, and the same goes for homemade bread and chips. I have a real weakness for any kind of treat.
I love food — plain and simple.
This past month I joined The Leftovers Club. As a food blogger who often cooks for two, we regularly have leftovers. I try to share or give food away whenever possible. If you’re a food blogger and often have extra dishes, the Leftovers Club is a great resource.

Oreo Toffee Brownies
16 brownies
5 minutes
35 minutes
40 minutes
Ingredients
- 1 box Betty Crocker Original Brownies (plus water, oil and egg)
- 1/3 cup toffee bits
- 26 Oreos
- 1 1/2 cup mini marshmallows
Instructions
Preheat the oven to 350°F (175°C). Prepare the brownie mix according to the box directions, then stir in the toffee bits. Spread half of the batter into an 8×8-inch deep baking pan. Arrange 16 Oreos in a single layer across the batter (four Oreos per row).
Pour the remaining batter over the Oreos and smooth the surface with a spatula. Bake for 30 minutes.
Remove the pan from the oven and top with the mini marshmallows. Return to the oven for about 5 minutes, or until a toothpick inserted into the batter comes out clean. Finally, crumble the remaining Oreos by hand and sprinkle them over the marshmallows. Press down lightly so the crumbs adhere to the topping.
