When dinner needs to happen fast, a stir-fry is my first choice. They’re quick, flexible, and you can usually throw together a tasty noodle bowl from pantry staples. Keep a few packs of rice noodles on hand so this becomes even easier.

This single-serving stir fry recipe was born the night I rushed home starving from a hot yoga session. I grabbed rice noodles, checked the fridge for vegetables, and assembled a fast, satisfying meal.

I partnered with SunButter during National Nutrition Month and wanted to highlight sunflower seed butter in a savory sauce. The sauce here uses SunButter’s organic sunflower seed butter for a rich, creamy texture and a boost of protein, magnesium, zinc, and iron.

The sunflower seed butter sauce is one of my favorites for noodle stir-fries. Make a quick batch while you cook or prepare a jar ahead to keep in the fridge. It also pairs well with other stir-fry combinations — try it with extra vegetables or tofu.

Description

A simple, single-serving stir fry featuring rice noodles and a creamy sunflower seed butter sauce — ready in about 10 minutes.


Ingredients

  • 6oz rice noodles
  • 1 tsp avocado oil (or other cooking oil)
  • 1 scallion, finely chopped
  • 1/2 cup broccoli, chopped
  • 1/2 cup water (to use as needed)
  • 1 tbsp sesame seeds

Sauce

  • 1 tbsp sunflower seed butter (SunButter or another brand)
  • 1 tbsp soy sauce
  • 1 tsp sriracha (adjust to taste)
  • 1 tsp hoisin sauce
  • 2 tbsp water

Instructions

  1. Make the sauce: whisk together the sunflower seed butter, soy sauce, sriracha, hoisin sauce, and 2 tablespoons of water until smooth. Set aside.
  2. Cook the rice noodles according to package instructions (for these quick rice noodles, boil for about 1 minute). Drain and set aside.
  3. Heat 1 tsp avocado oil in a pan over medium-high. Add the chopped scallion and broccoli and stir-fry for 2 minutes. Add 1–2 tablespoons of water if needed to steam the broccoli until tender, about 2 more minutes.
  4. Add the drained noodles and the sauce to the pan. Toss gently over medium-low heat, adding splashes of water if needed, until the noodles are heated through and coated in sauce.
  5. Remove from heat and sprinkle with sesame seeds before serving. Enjoy immediately.
