I’ve been reaching for the same homemade Cajun seasoning a lot this season — guilty as charged. It’s quick to make and adds bright, smoky heat to everything from wings to salads. If you like bold, simple flavors, these kebabs are an ideal way to showcase it without much fuss.

A Few Other Ideas For Cajun Seasoning

If you’re new here and curious what else to do with this seasoning: it’s excellent on crispy chicken strips with a minted garlic dip and great on grilled chicken for salads. The seasoning works well as a dry rub or mixed with oil as a quick marinade — versatile and always a welcome boost of flavor.

I often pair these kebabs with a fresh green salad for a light, balanced plate, which is exactly how they’re pictured here.

Cajun Seasoning

  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon onion powder
  • 2 teaspoons garlic powder
  • 2 teaspoons paprika
  • 1 teaspoon cayenne pepper
  • 1 teaspoon dried oregano

Combine the spices and store in a small jar. It keeps well—make a larger batch if you use it often. Reduce or omit the cayenne if you prefer a milder mix.

Notes About The Kebabs

  • I marinated the chicken for about 30 minutes. You can marinate longer in the fridge if you like—just bring the chicken back to room temperature before cooking so it cooks evenly.
  • Cooking time varies with grill temperature and piece size. These kebabs took about 15 minutes total over medium heat; watch for flare-ups and move pieces if the grill gets too hot so they don’t char before cooking through.
  • Serve with a simple fresh salad or your favorite dipping sauce. They’re delicious as-is, but sauces add variety if you’re feeding a crowd.

If you enjoy these, try other grilled skewer recipes with different marinades for variety. Happy barbecuing — enjoy the last days of summer!
