Red Pepper Grilled Cheese Sandwiches for School Lunches

When I made nacho night, I saved a cup of the red pepper cheese sauce to use in a grilled cheese later. Having the sauce already prepared made packing lunches the next morning quick and easy.

To see how the sandwich would hold up after cooling, I packed the same lunch for myself and stored it in a lunch bag with an ice pack. I ate around 11:30 a.m., which is when my kids usually have lunch. My husband was working from home and tried it too. The sandwich was only slightly cool to the touch; the filling became creamy, similar to the texture of cream cheese, and still tasted delicious. Both of us enjoyed it. As the filling cooled, it helped keep the bread together, so the sandwich was easy for little hands to hold.
