Ingredients

10 eggs, beaten
1 tablespoon butter
1/2 cup flour
1 teaspoon baking powder
1/2 teaspoon salt
16 ounces small curd cottage cheese
1/2 cup butter, melted
1/2 pound Monterey Jack cheese, grated
1/2 pound Monterey Jack jalapeño cheese, grated
4 oz can chopped green chiles
1 pound sausage, ham, or bacon, cooked (optional)

Instructions

Preheat oven to 400°F. Butter a 9 x 13 x 2-inch glass baking dish with 1 tablespoon of butter. In a large bowl, combine the beaten eggs, flour, baking powder, salt, cottage cheese, melted butter, grated Monterey Jack cheeses, chopped green chiles, and the cooked meat if using. Stir until evenly mixed. Pour the mixture into the prepared baking dish and bake uncovered at 400°F for 15 minutes. Then reduce the oven temperature to 350°F and bake for an additional 30 minutes, or until the top is lightly browned and set. Remove from the oven, let rest briefly, then cut into squares. Serve warm with salsa or guacamole and, if you like, mimosas.
